Easy peasy keto cheesy gluten-free eggs and spinach breakfast cup!!

I’m always looking out for easy but healthy gluten-free recipes and I came across this great one!
Wow, it was so easy to make. It only took me 5 minutes to prepare and cook, and it was delicious and quite filling too!!

I know that a lot of people choose to be on a gluten-free diet these days and I wish I could tell you that it was my choice too. Unfortunately, I have to be on this diet for health reasons. 

I’m still sad as I love bread sooooo much but I find that shop bought gluten-free bread tastes like chewing on a cardboard box. 

Not that I have experience of chewing on cardboard boxes though… haha!!

I do make my own gluten-free bread sometimes and this tastes so much better, and it’s also healthier too without sugar or too much salt. 

I’ll share this recipe with everyone one day too.

Anyway, here is the recipe for this easy microwave egg cup breakfast!…

*2 eggs
*1/2 cup spinach 
*A pinch of salt
*1/8 tsp black pepper
*2 tablespoons heavy cream 
*2 tablespoons shredded cheddar cheese

*Optional top-up;
I added some pumpkin seeds and smoked salmon and it was yummy!
I imagine it would be nice to add chopped bacon, seeds, spring onions, chopped nuts… oh, well, anything you desire or have available to use up in your fridge!

Cooking methods;

Step 1
Scramble your eggs in a small mixing bowl. Season the eggs with some salt and pepper. You can add additional seasonings at your discretion at this point.

Step 2
Add in the heavy cream and the shredded cheese. Mix it well with a small whisk or a fork. Make sure the cream is well incorporated as this will add some air to the mixture to ensure it is light and fluffy.

Step 3
Choose a ceramic or heat-safe mug that is at least 10-oz for one serving. Fill the bottom of the mug with whole or chopped spinach leaves of your choice. Pour the egg mixture over the spinach in the mug.

Step 4
Microwave your mug on high heat for 30 seconds. Stir the ingredients inside the mug. Then microwave on high heat for another 1 ½ minutes, adding 15 more seconds at a time if necessary until the egg is cooked through.

Additional information; 
I found the mug was quite difficult to clean afterwards with some of the egg on the sides… haha!
